The Farm Story: Bejofo Estate, Sambirano Valley, Madagascar

In northwest Madagascar, the Sambirano Valley holds a rare microclimate. Humid air moves inland from the Mozambique Channel and settles into fertile volcanic soils. Cacao has grown here for over a century. The valley remains the center of the country’s production, producing regional profiles with bright acidity and layered red fruits.

Bejofo is one estate within the larger Åkesson holdings near Ambanja. Certified organic and carefully managed, the estate produces exquisite cacao at scale while maintaining tight control over fermentation and drying. Most trees are Trinitario, descendants of earlier Criollo plantings introduced in the colonial era. In this terroir, the genetic blend expresses clarity, citrus structure, and vivid berry character.

Fermentation takes place in tiered wooden boxes, allowing controlled airflow and even heat distribution. Drying happens first on concrete patios and raised beds. The result is a strikingly unique deliciousness.

This origin plays a distinct role for Numinous. It's our first cacao we've sourced outside the Americas, and we've done so intentionally. Where Central American cacao leans toward warming complexity, luscious depth, heartful grounding, Sambirano brings a vital lift, piquant citrus and berries bringing a delightful playfulness. The contrast sharpens perception, the distinct high notes training the palate to recognize structure in cacao the way one learns structure in wine.

We love bringing difference, to showcase how wildly diverse and capacitous Cacao actually is.

Bejofo represents large estate-level traceability, holding a model of scaled integrated farming, where cacao grows alongside spices and other crops under long-term stewardship. The work is agricultural precision, and as land, variety, fermentation, and drying converge, they form an explosive flavor profile that is immediately recognizable.

A Note on Allergens and Additives:

We stone grind our traceable cacao in machines also making delicious things from tree nuts. Apart from that, we do not use emulsifiers like lecithins, or other additives like vanilla.

When we add sugar, it is intentional. We only use traceable, raw, organically and regeneratively grown cane sugar. We add sugar for the purpose of attenuating the innate power of cacao to meet our limited palates, increasing our receptivity to the delight in every morsel.
